
CESAR Y GEORGETTE, THE COFFEE SHOP WITH A PERUVIAN ACCENT
Always striving to offer its guests surprising, eye-opening, captivating, and thrilling experiences, the Machefert Group is launching its first coffee shop, “César y Georgette,” with a Peruvian flair, in Paris’s 1st arrondissement.
A fan of venues with a strong identity, such as1K Paris and the Kube Hotel, the group uses this new opening to tell the love story between César Vallejo, the famous Peruvian poet who came to stay at the La Dépendance hotel, and his wife Georgette. It was in February 1927 that the poet met his beloved; legend has it that he treated her to a coffee on their first date.
In tribute to this romance, the boutique hotel La Dépendance is opening a coffee shop called “Cesar y Georgette,” a place that celebrates the connection between Paris and Peru through a fusion menu of Peruvian coffees. To mark the occasion, Cesar y Georgette will offer a unique five-course tasting experience called “Omakasé, ” which translates from Japanese as “The Chef’s Choice”:

Just a stone's throw from the Louvre Museum, Cesar y Georgette is committed to offering a unique coffee experience in Paris by featuring a coffee grown in the highlands of the province of Convencíon, located in the Cuzco region of Peru, at an altitude of over 1,850 meters.
The beans, harvested in these high-altitude valleys, capture the richness of the volcanic soil and the region’s climatic variations, offering a unique palette of flavors. Café Cesar y Georgette, in partnership with the Incahuasi cooperative—meaning “House of the Incas”—offers an authentic product that transcends the simple cup of coffee. It is an invitation to rediscover coffee from a new perspective, to savor every sip, and to explore the unique aromas of the Cuzco region while supporting local Peruvian farms.
The establishment is committed to sustainable practices, fostering an ethical relationship with Peruvian coffee producers. In addition, this new location stands out for its innovative brewing methods, which rely on the slow extraction of coffee aromas. The use of the V-60 and Cold Brew allows us to fully bring out the diverse flavors that our fabulous espresso is brimming with. The roasting of Cesar y Georgette coffee pays homage to traditional methods inherited from the Incas. Each batch of beans is carefully roasted to reveal the subtle aromas and unique flavor profiles characteristic of Peruvian coffee.

And come evening, wine glasses take the place of coffee cups, offering a selection of drinks such as the Negroni, the Pisco Sour—Peru’s iconic spirit—or the classic Espresso Martini. Coffee lovers will enjoy these tastings amidst a 1920s-inspired decor that beautifully blends these two cultures, thanks to the famous round tables of Parisian bistros and the terracotta colors reminiscent of Peru.
