MONTIJO: THE DINING CELLAR THAT PUTS BATIGNOLLES ON SPANISH TIME
MONTIJO
Halfway between a dining cellar and a bodega, Montijo is the group’s newest venue, designed to delight both the palate and the eye. Here, you can discover or rediscover the richness of natural wines and share dishes crafted with traditional Spanish ingredients or those from the Mediterranean region in a warm, welcoming atmosphere. A true tribute on the plate to the Spanish roots of Eugénie de Montijo, the last French empress who lent her name to the Machefert Group’s Maison Eugénie hotel.
WELCOME TO SPAIN
The Spanish art of living is evident in this space designed by Katya Goncharova, where the style of a Parisian bistro blends seamlessly with the spirit of a traditional Iberian hacienda.
Open to the outdoors and bathed in light thanks to the large floor-to-ceiling windows and the green veranda, the rattan furniture blends perfectly with the spacious terracotta-colored area in the background, featuring natural materials such as terracotta and handcrafted wrought iron, accented by an Arab-Andalusian arch.
In a spirit of conviviality, guests can lean on the bar or perch on wooden stools facing a monumental stained-glass window depicting a decorative scene of community life in the former bar of Maison Eugénie, or take a seat around the large communal table that opens onto the kitchen.
NATURAL WINES AND GENEROUS PORTIONS
Every day, guests come here to choose a bottle from among a selection of about a hundred wines, guided by the expert advice of the restaurant’s Spanish-born sommelier, who knows how to create the perfect balance in food and wine pairings.
Wines primarily made from Spanish grape varieties, but also from other Mediterranean countries (Greece, Italy, Portugal, etc.). For food lovers, the menu offers a gourmet, sun-kissed selection celebrating Spanish cuisine, crafted with carefully selected seasonal ingredients, predominantly from the Iberian Peninsula. Delicious dishes to share that blend tradition and modernity. You can choose the classic tortilla, the essential pan con tomate with or without anchovies, or indulge in the citrus-scented prawns.
On Sundays, enjoy a delicious brunch with live music from noon to 4 p.m., featuring pintxos and a giant paella!
A PLACE WHERE ART IS EVERYWHERE
To round out the picture, Montijo is also committed to promoting an artistic approach through site-specific designs on the uniforms of sommeliers and hosts, created using the AI image generator DALL-E.
A monumental stained-glass window was also created specifically for the dining cellar, depicting a wine-tasting scene.
